So, it may be a little late for Christmas, but it is still the holidays. Perhaps you are starving for a quick, healthy, yummy snack?
Here is my PICO DE GALLO recipe. It is even green, red and white for the holidays. Keep in mind that variety is the spice of life. My measurements are vague, to say the least, but it leaves room for your own preferences. The important thing is having all the ingredients.
Stacy’s PICO DE GALLO
Tomatoes – Lots of them. Diced. I prefer fresh and somewhat firm. Use at least 4 good sized tomatoes.
White Onion – 1/4 cup or more. Diced. Amount is per your preference and should be about 1/3 of the amount of tomatoes.
Jalapeno Pepper – 1 to 2. Fresh. Diced. Use the seeds if you are a lover of spicy-hottness! Amount is per your preference and should be about 1/4 of the amount of tomatoes.
Cilantro – 1/4 cup or more. Fresh. Chopped. Cilantro has a very distinct flavor. If you love it, use lots! If you don’t love it, still put some in as it ties together all the flavors.
Rice Vinegar – 1/8 cup or more. My “secret” ingredient. Amount varies based on amounts of other ingredients. However if using 4 big tomatoes I recommend starting with 1/8 cup, or in my kitchen this means a “splash”.
Salt and pepper to taste.
Enjoy with chips or as a garnish to tacos, burritos, chicken breast. The possibilities are endless!
